The owner of the Paulie Gee’s pizzeria chain is gearing up to open a new location in Greenpoint.
Paulie Gee’s Slice Shop, the name of the new venue, will open at 110 Franklin St. as soon as the end of the month if construction and other work wraps up by then, according to Paulie Giannone, the owner.
The slice shop marks the sixth Paulie Gee’s location, but will distinguish itself from the restaurants by offering pizza pies and slices in a no-frills eatery and for takeout. Vegan slices will also be available.
Giannone, 64, says the idea is to keep things very simple.
“We’ll have a limited number of different pies available,” he said. “Very traditional, New York style.”
Patrons stopping by the upcoming Franklin Street site, just two blocks away from the existing Paulie Gee’s restaurant, can get plain, pepperoni, Sicilian, and grandma-style slices from the shop, among other types.

Giannone said the new locale has been a long time coming, and partly stemmed from a problem he noticed with his pizzas when he used to offer take out at his dine-in restaurants.
“Our pizza doesn’t travel very well,” he said. “The character of it changes quickly, and not for the better. It also doesn’t reheat well. That’s why I thought about owning a different style of pizzeria—serving the type of pizza that does travel well.”
Giannone hasn’t offered takeout as his restaurants in years for this reason, but has been experimenting with recipes to ensure the pizzas from his slice shop travel well.
The new site can also seat about 50 people, and will serve beer and wine at first as Giannone works to obtain a full liquor license.
The interior will feature classic pizza shop furniture and decor from the 1960s, including booths that came from a long-standing pizzeria in New Jersey, where Giannone would take his sons decades ago. An old coke machine will also be at the site.
Giannone, who gave up a career in the corporate world almost a decade ago, has since opened up pizza restaurants in places like Columbus, Baltimore, Chicago, and Miami.

Good luck Paulie. I live nearby on Greenpoint Ave. and I am looking forward to it. Hopefully noise will not be a problem for residents living next to it.
